Today we’d like to introduce you to Cassaundra Seabrooks and Ebony Tyson.
Cassaundra and Ebony, can you briefly walk us through your story – how you started and how you got to where you are today.
It was 2016, when my best friend (Ebony) called me and asked me if I had ever had a macaron. I told her no, I asked her “what’s a macaron?” She explained to me it was a French cookie that’s really hard to make and she sounded a bit frustrated because she was on her 7th batch and still hadn’t nailed them. This was unusual for her because she’s awesome at mastering recipes. So a few days later she bought me some blueberry cheesecake macarons, and at the time I was amazed at how delicious they were. Well fast forward 2 years later, we laugh about that day because the macarons she made were super hollow and overbaked, which is a huge no-no for macarons. Because of that day, I suddenly became intrigued with them and I wanted to try more flavors. We both search high and low for macaron shops and were surprised there we no bakeries dedicated to macarons in our city.
Eventually, we took a vacation to Florida and found the most beautiful macaron shop and we were finally able to indulge! When we came back from vacation, we decided to bake them ourselves and make fun and unique flavors. Ebony starts taking them to the work for office parties, and her colleagues would ask for more and even offered her money to make them. She asked me to help her and we decided to partner together to make them and sell them at farmer’s markets and local events. Eventually, we realized we wanted to do this full time because we love it so much so we sought out a commercial kitchen and that took over a year before we could get into the facility and get our licensing. We just opened this October and we haven’t stopped celebrating. Our goal is to get our own storefront where customers can come in enjoy our macarons with a cup of coffee or tea. Right, now our customers are able to purchase online and pick up at the kitchen, but we also offer nationwide and local delivery.
Has it been a smooth road?
Our main struggle throughout this process was finding a commercial kitchen to bake our product. We didn’t have the funds to buy a space and build a kitchen, so renting a kitchen was the best option for us being a startup with limited funding.
So, as you know, we’re impressed with Le Elegant Macaron – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Our company specializes and French macarons. When you shop for French macarons you’ll usually find they come in very traditional flavors like lavender, rose, pistachio, vanilla, chocolate. So, what we’ve done is taken the macaron and exposed it to extraordinary flavors like cherry cola and cotton candy. We are so proud to offer over 30 nontraditional flavors year-round.
Let’s touch on your thoughts about our city – what do you like the most and least?
I love that our city Macon, is forever growing and expanding, I remember a few years ago I would have never thought I would see some of these different types of businesses that have sprouted, let alone to be a part of that movement. The only thing I dislike about Macon is the rate of growth. I just feel that sometimes it takes a little while for us to get new businesses going but hopefully that changes in the future and it will be a bit easier for companies to come here and open up a business because it’s always very exciting to see a new place to go shop or eat finally open up.
