Community Highlights: Meet Mercedes Hereford of Phattychow

Today we’d like to introduce you to Mercedes Hereford. 

Hi Mercedes, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
In 2012, I attended Le Cordon College of Culinary Arts in Tucker, GA. I started working for Wolfgang Puck Catering Company at the GA Aquarium as a prep cook and around that time, I had my 3rd child and was unable to continue working and going to school, so I dropped out of college and started working full time. Eventually, I relocated to Florida in 2013 and worked for some great companies over the years such as Tommy Bahama, and numerous Hilton brands, Pollo Tropical and Bonefish Grill working under some amazing Chefs perfecting my passion for food and learning management and business skills. After six years, I was inspired to start my own business and after speaking to my sister about a name that’s how Phattychow came about. Now that I have been in business for about 4 years now providing catering, corporate events, and private chef services I’m in the works to expand to different states and provide my service. 

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
It hasn’t always been a smooth road for me, because finding the right help in the kitchen, lack of capital, and ideal location to expand my business has been very difficult. I have had an increase in clients due to word of mouth and social media. which helps me overcome those obstacles. 

Thanks – so what else should our readers know about Phattychow?
Phattychow is a catering company that specializes in Brunch. “Brunch is us”! We are known for our Brioche French Toast, Shrimp & Grits & other great southern brunch items. What sets Phattychow apart from any other Catering / Private Chef Service is that we try to make services affordable and focus on making the customer feel like they are at home no matter how large or small the event is. We truly care about the safety of their food and always bring great flavors and ideas to guests from all backgrounds. 

What does success mean to you?
Success to me is any goal you set forth and gain wealth, respect, or fame from.
