I’ve been designing restaurants for 12 years.

My wife insisted we open a few of our own concepts. HoneyBubble and The Consulate, with more to come.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Fairly smooth. Quite taxing as far as working 24/7. But my past issues with the Atlanta corporate world were not pleasant. Being your own boss is priceless.

Thanks – so what else should our readers know about The Consulate restaurant ?
We are an internationally inspired restaurant. We have a guest spin our globe every 90 days and blindly point at the globe to decide the next menu focus.

We take great care in the details of food and service. being as authentic as possible is very important to us.

We’d be interested to hear your thoughts on luck and what role, if any, you feel it’s played for you?
Not much luck involved. I feel it’s more of learning from all of my past mistakes, is what guides a smart decision. I work 24/ 7 with my wife. She is our executive chef.
