Today we’d like to introduce you to Sam Stuhlman.
Sam, can you briefly walk us through your story – how you started and how you got to where you are today.
The restaurant will be open 2 years in February 2018. I am the third owner, having bought it in May 2017. This is my first restaurant after a career in training and management consulting in the IT industry. I came in with a business plan and a passion for making good food and doing things right.
We have preserved and added to the original owner’s menu and recipes. We bake our own bread, make all our pizza dough, and make mozzarella all in our tiny kitchen. We make all the sauces here from Italian varietal tomatoes (grown in California).
We bake our pizzas in a wood-fired oven using house-made dough and fresh made toppings. The Neopolitan-style pizzas are rapidly getting well known for taste and quality in the area and beyond.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
No road is ever perfectly smooth. Many of the standard restaurant items were not here when I took over. We only had 4 coffee cups and 5 espresso cups. The kitchen was using appliances from the Dollar Store. When our business began to grow, we didn’t have enough plates or water glasses. We learn as we go. Our chef is world class and our dishes get rave reviews. As we grow, we also improve. Our team, from the servers, to the pizziola, to the kitchen is fantastic.

We are a 50-seat Sicilian restaurant, known for our pasta dishes, wood-fired pizza, and weekly specials. I am proud of our commitment to producing the highest quality food in our tiny kitchen. Our dishes are simple, but executed right. There is not a single item on our menu that I am not proud to serve. We thrive on our friendly, relaxed atmosphere where we treat our customers as though they are long-lost cousins.
I make it a point to try and visit every table, every night to say hello and make sure we are living up to our promise. We cook everything to order, so sometimes the wait can be long, but it is always worth it.
