Hi Galliano, we’d love for you to start by introducing yourself.
Raised in a very traditional Greek and Italian home environment, preparing food and entertaining guests were always a huge part of daily life.
Cooking and entertaining guests was a daily norm and still is to this day.
Most of our memories of holidays included waking up to the smell of moms cooking.
In retrospect, opening a restaurant was just an inevitable occurrence that happened as a bi-product of our personalities.
Our food is a representation of our personal relationship to good food as well as good people.
Although we did have some outside influences and inspirational figures that helped shape and guide our aspirations in our lives that inspired us to open a restaurant, most of our aspirations originated because of our desire for good food and good people.
Many of our family members worked within the hospitality industry from hotels to restaurants.
Our interest in food first began with our mothers. Our mothers cooked for us regularly and Instilled the virtues of a healthy meal. The inspiration from our mothers cooking was the foundational building block to our own methods of cooking.
One of my fondest memories is cooking for everyone of my friends on a regular basis during various camping trips, home get togethers and even being the designated person in charge of ensuring that good food will be available at professional events.
My passion for entertaining guests and really caring on an emotional level about the happiness of my guests definitely played into how this restaurant became a reality.
Much of what inspires and motivates us forward is the idea of being involved in family and friends events. Weddings, Get togethers, Lunch and Learns and Parties are fantastic for enjoying the universal language of food.
Food is a powerful tool that can be enjoyed in the company of good people. Like music, food brings and creates its own natural ambience that brings us closer. Food is a natural commonality between people. We can cumulatively agree that food is the ultimate love language of society.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
No, not at all and this is a common topic that I end up discussing with our guests frequently because they ask.
From working 70 Hours a week to things not going as planned, you have to be very resourceful. You also have to be very patient and understanding.
Many things will happen and it is up to you to learn and grow from everything.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Art is a very important part of my life. I enjoy drawing, cooking and visiting museums. Some of my personal inspirations are derived from Picasso.
