Hi Ashleigh, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I launched my YouTube channel, The Peculiar Chef, in July 2025 with one clear mission: shine a light on the small, local, hole-in-the-wall spots most people overlook. I’ve always believed great food doesn’t have to be expensive, and I wanted to prove that you can still find fresh, thoughtfully prepared dishes in places you’d never expect.
What started as me sharing my genuine love for these hidden gems has grown into a community I’m incredibly grateful for. Today, The Peculiar Chef has 2.1K subscribers, and every single milestone feels like confirmation that people connect with real food, real stories, and real experiences. I’m thankful for the support, and I’m only just getting started.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It definitely hasn’t been a smooth road. Like anything worth building, there were plenty of challenges along the way. I had to figure out everything from choosing the right equipment to learning the basics of filming, audio, and editing. I spent countless hours researching YouTube, studying the algorithm, watching other creators, and trying to understand what truly makes content connect.
Another learning curve was developing a rhythm with my camera woman so she could capture exactly what I saw in my head — and I’m extremely grateful for her. But the biggest challenge wasn’t technical at all. It was finding me. I knew the vision, but getting comfortable in my own skin and letting that confidence show on camera took time.
Now, I finally feel like I’m stepping into who I am meant to be on screen. You can literally see the growth from my first video to now. And honestly, I’m excited — because if the journey has brought me this far already, I can only imagine what’s ahead.

I’m a professional chef with over a decade of experience, and at the core of everything I do is a genuine love for food. Cooking has always been my foundation, but YouTube is where my passion found a new lane. It’s become my largest platform, and it allows me to showcase the places and plates that truly deserve attention.
What sets me apart is my commitment to honesty. I don’t sugar-coat my reactions, and I don’t do clickbait. If something isn’t good, I’ll say it. If it is good, I make sure people know exactly why. Viewers trust me because they know I’m giving them real experiences, not curated hype.
I also work hard to highlight spots that won’t break the bank. With the way the world is right now, people lean on fast food because of price — even though fast food prices have climbed too. I want to show that you can still eat local, eat fresh, and eat well without spending a fortune. There are incredible small businesses serving quality meals at fair prices, and they deserve to be seen.
What I’m most proud of is being able to help people discover those hidden gems. My motto is simple: Why stay chained to a chain?
Do you have recommendations for books, apps, blogs, etc?
I’m not really a podcast or blog person, and I don’t rely heavily on apps or outside resources. The one thing that truly grounds me and guides me is reading the Bible and asking God for direction. That’s where I get my clarity, my peace, and my sense of purpose. Outside of that, I lean on real-life experiences, staying observant, learning as I go, and trusting my instincts.
