Hi Vincent, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
came from France in 2018 in Georgia to open my French restaurant. after several years in Country side I decide to come closer to the the city.
Now in Canton since three years. The restaurant is set in historic house in historic downtown canton. I’m the executive Chef of this refined restaurant, me and my team really focus on the details and the service provided to the customer.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Arrive from France without speaking English and very short experience in kitchen but passionate. it was a hard way to learn from the country side for the language. the big struggle was also coming in Us with a really limited amount of money force me to pick a place with low investment in Washington ga. which where my product was little bit to elevated for the area but I adapt my product to the place. following by covid .
finally find an opportunity without investment in Big Canoe Ga where my previous experience was really useful. after few year moved to canton.

C est la vie is a fine dinning restaurant, French and modern influence, elevate experience.

We offer a trip to France without flying.

What sort of changes are you expecting over the next 5-10 years?
The palate of the people change and they are more health and quality conscientious.
