Meet Brandon Hughes of Bellina Alimentari

Today we’d like to introduce you to Brandon Hughes.

Thanks for sharing your story with us Brandon. So, let’s start at the beginning and we can move on from there.
I was working in the motorcycle industry at the time I decided to go to culinary school. I always had a knack for cooking and enjoyed it, so I made the decision to go to culinary school.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
I would say all things given. It was a pretty smooth road for me.

I’ve always had a great work ethic, and I’m very determined to succeed in whatever I’m doing. Failure wasn’t an option and never is. I was humble, I took criticism from my mentors and use that to grow. This isn’t an easy profession at all, you have to enjoy the torture a bit and not get consumed by long, low paying learning curve. I knew all the years I worked for near nothing would pay off sooner or later

So, as you know, we’re impressed with Bellina Alimentari – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
At Bellina, we are very proud of our pasta program. We may not get credit for it since we’re in a food hall… but we make every piece of our pasta in-house, and cook it to order. We buy great quality ingredients and have a really nice southeastern cheese program.

All of our proteins come from Ga, Brasstown Beef, Riverview farms pork and eggs (all pasta is made with farm eggs), enchanted springs trout, and Georgia shrimp. Geezers Garden and tucker farms for produce. We also have an amazing culinary club where we teach classes several times a week

So, what’s next? Any big plans?
I plan to grow with the company and help develop further concepts. Tal Baum is an amazing boss, I was so lucky to meet her and be a part of this growth in such a young company.
