Today we’d like to introduce you to Birdie Niyomkun.

Hi Birdie, so excited to have you with us today. What can you tell us about your story?
We’ve always been obsessed with hospitality and places with great designs —seeing people light up over a great drink or a good meal is what makes us happiest. After almost a decade behind the bar and years of experimenting with Thai ingredients, I realized I wanted to build something of my own that felt personal, playful, and rooted in my culture.

Tipsy Thaiger started as a small project: a neighborhood Thai spot where we could share the flavors we love, craft cocktails with real care, and create a space that feels like home. I teamed up with friends who believed in the vision, and we poured everything into bringing it to life.

We opened just a few months ago, and the Roswell community welcomed us so warmly. Every day we’re reminded why we started—to create a place where people feel cared for, inspired, and connected through food and drink.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Not at all—but every challenge has shaped who we are today. Opening a restaurant is one thing; opening a Thai concept with a craft bar program, in a historic building, is a whole different journey. We dealt with construction delays, equipment issues, licensing hurdles, and the stress of wearing every hat at once.

And once we opened, the real work began—building a team, creating systems, training for consistency, and learning how to keep quality high even on the busiest nights. There were moments where it felt like everything needed attention at the same time.

But those struggles pushed us to grow fast, stay creative, and build a stronger foundation. The tough days taught us resilience; the good days reminded us why we love doing this. And the support from our team and the Roswell community has made every challenge worth it.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
At my core, I like to create. I love taking Thai flavors, traditions, and techniques—and reimagining them in a way that feels modern, playful, and approachable. My background is in cocktails, business, and hospitality, but my work now spans everything from recipe development to design, branding, training, and building the overall experience at Tipsy Thaiger.

I love bridging cultures:
bold Thai comfort + craft cocktails + a warm, neighborhood feel.
Guests know us for creative drinks, unique dishes, and the little details that make the experience feel thoughtful and fresh.

I’m most proud of how we’ve taken something deeply personal—Thai food and culture—and presented it in a way that feels exciting for both newcomers and longtime Thai food lovers. Whether it’s a pandan negroni/ green curry sour or playful and vibrant bar snacks, we try to make everything inviting without losing authenticity.

What sets us apart is our point of view:
we honor tradition, but we’re not afraid to innovate.
We have fun with flavors, design, and storytelling, and we make Thai cuisine feel current, creative, and accessible. And above all, we lead with hospitality—making people feel cared for from the moment they walk in.

How do you define success?
For me, success isn’t just about numbers or awards—it’s about impact. It’s seeing guests genuinely enjoy themselves and their company, watching our team grow in confidence and skill, and feeling the energy of a place that brings people together.

Success is when someone tells us our food reminds them of home/ their trip to Thailand, or when a guest tries Thai flavors for the first time and falls in love. It’s when our staff feels proud to work here and supported in what they do.

At the end of the day, success means creating something meaningful—something that makes people feel cared for, inspired, and connected. If we can do that consistently, then we’re succeeding.
