Today we’d like to introduce you to Katie Pfister

Hi Katie, so excited to have you with us today. What can you tell us about your story?
Born and raised in Marietta Ga and with a love of baking my whole life we are excited to have chosen to settle in Marietta(home!) and share our passion of baking and food with our friends, family, and community!
Katie and Micah Pfister(owners/pastry chef/chef) have owned and opperated two restaurants on The Marietta Square and then decided to move off the Square to focus on a new dream of bringing small town charm to their own neighborhood while creating a place for people to sit and enjoy! Katie our pastry chef leads the kitchen in baking all pastry from scratch in the kitchen daily. From bread and croissants to cakes and tarts there is something for everyone to enjoy! Along side husband and chef Micah Pfister the menu is built from simple but good seasonal food, sourced locally when possible and highlighting their southern roots with a little French flair here and there! We move to our space 2 years ago after we outgrew our 500 sq foot outdoor only space and are now proud to offer indoor seating, a meeting room, a big green space with a natural playground for kids to run and play in our reovated 5000 sqft space! We cant wait o welcome you!

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
This industry is never easy! But thankful to get to do what we love day in and day out! From COVID, price increase of goods, build out of a new space, staffing, all while growing our family and having 3 little boys at home(all of which who have learned good work ethic ;)) there is a new struggle every day. Were thnakful for a community who loves us well and supports us and a staff that works hard to help make this dream a reality!

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I(Katie Pfister) am a pastry chef trained at The Culinary Institute of America in Hyde Park NY. We are proud to be a scratch made bakery and offer a wide selection of daily baked goods and treats.
We start our morning every day at 4am so that all your pastry is fresh from the oven! Our whole wheat croissant is my very favorite…I had a bite of one while in Paris and worked hard to recreate it…lets not even talk about how many eidts of this recipie i made before it was perfect!

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
We have recently opened a pizza restaurant in our old space across the street, Micah-Angelos and are looking forward to settling into new Sessions space and working with pizza to offer a fun enviorment in our neighborhood. We hope to one day add wine tastings and maybe even a fun supper club event to our calendar! Bringing f un community centered focus to our business we feel like is the best way we can pour into our community to better life for our family as well as those around us. We hope to be a bright spot and are so thankful to get to be here helping grow the city we love…who knows whats next!
