Daily Inspiration: Meet Erin Daniels

Today we’d like to introduce you to Erin Daniels.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I started baking and cooking at a very young age. Basically as soon as I could stand on a chair or stool to reach the counter, my grandmother’s had me helping in the kitchen. I love cooking soul filled southern food and baking all sorts of treats.
I began making sourdough right after our first was born almost two years ago, and became more mindful of all of the ingredients that we were putting in our bodies. I came from a background in human biology and healthcare to being a stay-at-home mom, so this was just the science-y challenge my brain needed!

Fast forward to February of this year, we bought a home in Good Hope, had our second baby and I opened Rolling Shoals Bakery! I felt like it was the right time, even amongst the chaos of having two kids under two, to offer something that I am passionate about to my local community.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Having two babies means that there are many late nights and early mornings so as to not take too much of my time away from my kids. This cottage bakery allows me to pad some of our day-to-day expenses, but my #1 job is being a mom. There are never enough hours in a day!

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I am a cottage sourdough bakery, which are fairly easy to come by these days, but I offer all of my products with high quality, thought through ingredients. I look for local farmers for produce and ingredients for special seasonal items like peach cobbler cookies. I love supporting local! I offer gluten-free products, as well as products made from flour I grind from whole wheat berries right into the mixing bowl. My motto is that if I wouldn’t feed it to my family, I won’t sell it to yours!

What has been the most important lesson you’ve learned along your journey?
I went into this adventure wanting to be very real with my customers, and I think that this has been solidified. Real, good food is meant to be different shapes and sizes without compromising quality. I didn’t want my products to be cookie cutter, (pun exists there- intended or not haha) I wanted them to reflect that they were poured over by another human being. If people are looking for perfect, head to the grocery store; but if they’re looking for something comforting and tasty I have you covered.
