Today we’d like to introduce you to Jacob Jin and Sophie Choi.

Jacob Jin and Sophie Choi

Hi Jacob and Sophie, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
My sushi journey began with an unexpected opportunity in San Diego, California. A sushi restaurant where my wife worked as an office manager needed a part-time sushi chef, and I decided to give it a shot. As a lifelong sushi fan, the idea of working in a Japanese kitchen while getting to enjoy sushi every day felt like a dream. But once I started, I quickly realized that sushi was much more than just great food—it required discipline, precision, and years of dedication.

At first, I struggled with the techniques and the fast-paced nature of the kitchen. The level of detail and craftsmanship expected in Japanese cuisine was far beyond what I had imagined. But instead of feeling discouraged, I became even more determined to improve. I spent countless hours refining my skills, learning from experienced chefs, and immersing myself in the art of sushi. What started as a part-time job soon turned into a lifelong passion.

After years of training, I reached a major milestone in my career—I was given the opportunity to co-own a restaurant. This experience was transformative, not only sharpening my skills as a chef but also teaching me the ins and outs of running a business. I learned firsthand the challenges of managing a restaurant, from sourcing high-quality ingredients to creating an exceptional dining experience.

In 2023, my wife and I took a big leap and moved to Georgia with our two young children, ready to start a new chapter. It was both a fresh start and a thrilling challenge—one that ultimately led to the creation of Sushi Momo in Johns Creek in 2024. The journey has been filled with ups and downs, but every challenge has made us stronger and more grateful for the opportunity to share our passion with a new community.

Now, we can’t wait to welcome our guests, share what we’ve built, and create unforgettable experiences through the art of sushi.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
When my wife and I moved from California to Georgia, we were stepping into the unknown. We had no network, no local knowledge, and no idea where to even begin. Everything felt unfamiliar—the market, the people, even the way the restaurant industry operated here. Finding the right location for our restaurant was just the start. We had to navigate complicated legal processes, apply for business permits, and figure out financing, all while trying to understand Georgia’s sushi scene. What styles did people enjoy here? Where could we source the best fish? And most importantly, how could we introduce something fresh while still connecting with the local community?

To get a better understanding of the industry, I started working at a local sushi restaurant. The team was welcoming, the work was steady, and for a moment, I questioned everything. The security of a stable job was tempting—why put myself through the stress and uncertainty of opening my own place when I was already in a good position? But deep down, I knew I had a bigger vision. I didn’t just want to make sushi—I wanted to create something of my own, a space where I could share my passion and craft something truly special. Entrepreneurship is always a battle with self-doubt, and like so many others who take this path, I had to make a choice: stay comfortable or take the leap.

Just one year after moving, we opened Sushi Momo. Looking back, I realize those struggles weren’t just obstacles; they were necessary steps. Every challenge—from learning a new market to building a business from the ground up—pushed us to grow. It wasn’t always easy, but those moments of uncertainty shaped who we are today. And now, every time we see a customer enjoying our food, we know it was all worth it.

And most of all, I want to thank my wife, Sophie, the co-founder of Momo. She may not always be in the spotlight, but behind the scenes, she’s the one keeping everything together—handling paperwork, interior design, marketing, and so much more.
