

Today we’d like to introduce you to Larry Williams.
Larry, we appreciate you taking the time to share your story with us today. Where does your story begin?
My journey to Atlanta begins with a mandated evacuation from New Orleans which lead us to Birmingham, Al. The opportunity to enhance the educational experience for my four children brought us to Georgia. Settling in Atlanta was very challenging. My wife and I are teachers by trade and getting certifications in Georgia proved to be more challenging. For the first six months of living in tucker, I was still teaching in Birmingham, Alabama, coming home only on the weekends. Once my certification cleared, I was hired to teach biology at Stephenson High School in Dekalb County.
My family is the sole reason why I pursued opening a food truck. My passion for exceptional food for every meal was an exclusive experience for them, and it was their idea to share that experience with everyone. We have gained much experience during this journey in establishing ourselves and the food truck in Georgia.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
To quote Murphy’s law, “Anything that can go wrong, will go wrong”. That has been true for most of the processes we have had to experience in getting established here. From getting our children’s vaccination records not being accepted for school enrollment to the health department declaring that I could not build a commercial kitchen in a home dwelling.
Building a commercial kitchen in a home dwelling was the most complex endeavor I have ever undertaken. After getting the clearance from the fire department and Building/Planning to begin renovations, the environmental health inspector tells me they cannot approve it. However, after weeks of back and forth, completing several tedious tasks, and tons of paperwork, the vision came to fruition. It took a year to build it myself, and it is well worth the time and sacrifice.
Appreciate you sharing that. What should we know about Nu Awlins Flavour Food Truck ?
We are natives of New Orleans serving authentic New Orleans cuisine. Our menu is very exclusive and continually evolving! I like to say “We’re a small truck with major flavor!”. Our Crawfish Quesadilla and Shrimp and Grits along with our Spring and Summer Crawfish Boil is an experience everyone needs to have.
Our customers are important to us and most of them return to the truck for a second serving or to try a new item during a single event. For this reason, we make sure our prices are reasonable.
