Hi Galliano, thank you so much for taking time out of your busy day to share your story, experiences and insights with our readers. Let’s jump right in with an interesting one: What do the first 90 minutes of your day look like?
The first 90 minutes of my day consists of a lot of prep work both inside and outside of the kitchen. Ensuring the freshest of ingredients and organized prep food items is a hidden, yet very important part of my day.

Can you briefly introduce yourself and share what makes you or your brand unique?
I was raised in a Greek/Italian Household consisting of members of the family who really took passion inside of the kitchen.

Our love for good food only expanded over the years and our current restaurant is the result.

It is something that we all enjoy and take much pride in.

Appreciate your sharing that. Let’s talk about your life, growing up and some of topics and learnings around that. Who taught you the most about work?
My father. He worked endless hours in the hospitality industry and did very well for himself and the family.

Was there ever a time you almost gave up?
No, giving up has never been an option for any of us.

Next, maybe we can discuss some of your foundational philosophies and views? Is the public version of you the real you?
Yes, what you see is what you get. We give our all daily and people see and appreciate it.

Thank you so much for all of your openness so far. Maybe we can close with a future oriented question. What will you regret not doing? 
The biggest regret for most is inaction. Looking back and realizing that you could have done more. For this reason, it is important that we give our best every day.
