Today we’d like to introduce you to Carson Young.
Thanks for sharing your story with us Carson. So, let’s start at the beginning and we can move on from there.
I grew up in Buckhead and was working a full-time job in Atlanta’s Midtown neighborhood when I first noticed the city’s need for good quality, quick food. At this point, my lunches usually consisted of cafeteria food, and I was tired of not having a better option in our neighborhood. Around the same time, I took a trip to LA and experienced the emerging food truck industry. When I went back home, it clicked – I wanted to help pioneer Atlanta’s food truck scene.
We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Today, Atlanta has food trucks throughout its neighborhoods, but it wasn’t always like that. When we launched Yumbii in 2010, we were the first food truck to roll out in the city, and being “the first” came with its own set of challenges. We had a lot of permitting and regulation hurdles to overcome, not to mention that people weren’t accustomed to ordering food off of a truck! It’s thrilling to see how much the industry has grown and become a vital part of our city’s food culture.
Opening a brick-and-mortar restaurant was equally challenging. We had to find the right space, oversee construction and renovation, obtain a liquor license, etc. Thanks to our food trucks, we had the advantage of being able to hone our concept and learn which dishes were favorites among our customers, and listened to their feedback in designing our space and menu at the Taqueria.
So, as you know, we’re impressed with Yumbii – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Yumbii is known best for our two food trucks, where we serve up everything from Asian Rib-Eye Beef Street Tacos and Quesadillas, to our famous Sesame Fries. Our brick-and-mortar taqueria is an extension of the street food we’re known for, with an expanded menu and inviting space for the community to enjoy. Our menus draw from Southern, Mexican, and Asian flavor profiles, and dishes from both our food trucks and the taqueria are sweet, spicy, and full of fresh ingredients like cilantro, garlic, and citrus. One of the ways we stand apart is with our eco-friendly “Super Food Truck” that we debuted last spring. It’s the first of its kind on the East Coast and uses a highly fuel-efficient engine to convert exhaust into harmless nitrogen gas and water vapor.
