Today we’d like to introduce you to Cody Taylor.
Cody, can you briefly walk us through your story – how you started and how you got to where you are today.
Heirloom Market BBq was started ten years ago when husband and wife chefs decided to combine their love of traditional American bbq and a Korean pantry. Chef Jiyeon Lee, a former Korean pop star, and Chef Cody Taylor, a classically trained chef, opened up in the smallest roadside shack next to the Chattahoochie River with the dream of making their own style of smoked meat and sides. Featured in dozens of TV shows and magazines, the couple was nominated for a James Beard Best Chef Southeast in 2020. We have often been credited with starting the classically different bbq style, so many new places are doing, just being ourselves.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Not always smooth for sure, the biggest hurdle besides covid 19 in 2020 was a fire that destroyed our smokehouse in 2018… both events only had us close for two days total but we have had a great team and restaurants always have bumps… fires, pandemics, floods, etc.
Please tell us about Heirloom Market BBq.
We specialize in combining traditional wood smoke meat with Korean flavors… miso injected brisket, gochujang rubbed pork ribs, Korean Fried Chicken on Wednesdays etc. The sandwich that really put us on the map is the Spicy Korean Pork Sandwich with Kimchi slaw and cucumber banchan. Our unique roadside location with a traditional counter service setup is combined with inspiration from Korean grilled meats and side dishes and we have been around for ten years!
Do you look back particularly fondly on any memories from childhood?
It would have to be fishing and hanging out on my grandparent’s ranch in East Texas. Chef Jiyeon’s would be helping her grandmother prep banchan when she was young and assisting her mom as a street food vendor in Seoul.
