Meet Erik Hernandez

Today, we’d like to introduce you to Erik Hernandez. Erik was introduced to us by the brilliant and talented Daniela Guevara.

Hi Erik , we’re so thrilled to have you sharing your story with us today. Maybe we can kick things off by having you introduce yourself to our readers? We’d love to have you go into your story and how you got to where you are today.
My name is Erik Hernandez I was born and raised in Ga, my dad is from Mexico and my mother from Puerto Rico. I Manage the operations for The Original Pancake House in Alpharetta,Ga. I have been working with the company since 2006 and year before we moved locations from Duluth, Ga to Alpharetta. I started when I was 15 as a dishwasher/busser. Quickly learned the kitchen and felt a passion for cooking. My father managed 3-4 locations of The Original Pancake House in the 90’s. Chesire bridge, Brookhaven, Peach-tree ind. and Duluth before moving to Alpharetta in 2007. I work with my brother ,father and my mother helps as well,truly a small family run business

Please tell us more about your brand, The Original Pancake House – ALPHARETTA
The Original Pancake House is a franchise that started in 1953 in Portland, Oregon. Which is still ran today by 3rd generation owners. We are a family owned, owner operated restaurant. We make everything from scratch from our buttermilk pancakes, to our Belgium waffles we have a variety of flavors. Our French crepes and french toast using fresh french bread from a local bakery are unique as well. Our omelettes are 6 eggs that are fresh cracked,whipped and cooked in a skillet and finished off in the oven. What sets us apart from others is we make all of our batters from scratch, and continue to follow the franchise recipes without compromising the quality of our food with cheaper substitutes. We continue to use only heavy cream 36% butter fat , we make our clarified butter that we cook all of our eggs and meats in, using 55 lb blacks if 96 score butter and melt it down at very low temperature. It is a type of oil used in cooking that has many benefits. Clarified butter does not turn brown when cooked, it maintains the flavor of butter, and it is much healthier than butter that is not clarified. We continue to run only using the finest ingredients, from our food to a special blend of coffee made just for us to sell. We take great pride in what we do everyday. I myself handle the day to day operations. A jack of all trades in the restaurant business having worked every position at this location. From customer service, expediting the food coming out of the kitchen, training new staff , to having to jump in the kitchen if needed and making sure our food is consistent no matter what day of the week it may be. What sets us apart is that we are truly an owner operated franchise, before I started managing 5 years ago my business partner David Bradley stood the line for over 20 years making sure we continued to follow our business model. We are the start of day for most people wether it’s their day off or they are on their way to work/school. They can always come in and be served the best pancakes in town, with a variety of dishes to choose from. We continue to be a family restaurant and over the years I have seen 2-3 generations of families come in through our doors and be loyal patrons. Growing up my dad managed Chesire Bridge location and Brookhaven(closed in 99) I grew up hanging around the restaurant, helping the prep lady or rolling silverware or watching the restaurant in action. I fell in love with the feeling of satisfaction when a customer is amazed at the plating of the dish and satisfaction of leaving a clean plate afterwards, a feeling of gratification. It’s what I like to think of my way of giving back and continuing The Original Pancake House legacy from our family to yours.

So, as we mentioned to our audience earlier, you were introduced to us by Daniela Guevara and DMTaqueria and we really admire them and what they’ve built. For folks who might not be as familiar, can you tell them a bit about your experience with DMTaqueria.
I found Daniela following other foodie/ cooks in Atlanta, metro area on Instagram. Her food looked delicious, and I love independent small food spots, and who doesn’t love tacos. She’s a hard worker and when I tried her tacos, I knew I had to have her cater for my baby shower. She had everything we needed fed everyone well. Carnitas were bomb, chicken and steak tacos and fresh garnish. She even made something for my vegan family members. She provided some great salsa varieties, and some fresh waters for all my guest to enjoy. She was very professional and brought help to cater to everyone’s needs.
