Hi Erika , thank you so much for sitting down with us again. For folks who might have missed our initial interview, can you start by briefly introducing yourself?
I am the owner of A Cakeful of Joy, LLC. I am a mother, educator, and bakery owner, and I wouldn’t have it any other way. I create homemade cakes and treats in hopes to bring a little bit of joy into people’s lives just by having dessert or a sweet treat!
How did you learn to bake? What’s your motivation?
I learned how to bake by watching my mother in the kitchen. She used to bake a lot for church functions or small gatherings. However, it wasn’t until I was a teenager that I took a vested interest in really learning how to bake like she did. My mother is no longer with me, but my motivation comes from knowing I can pass down what I have learned to my daughter and continue the legacy.
What do you think is your best cake/dessert? Which one sells the most?
That is a tough one…but I would have to say it’s a tie between my cheesecake and pound cake. Here lately, my cupcakes have become popular as well!
What inspired you to write your cookbook?
My inspiration came from just wanting to stretch myself and grow as a baker. At first I thought maybe I would just do an e-book, but then I kept adding recipes and getting different ideas. It was hard to choose which recipes to include but I tried to get some classic, tried and true recipes that were easy to follow. I even included my daughter in the process and she has a couple of recipes in the cookbook as well.
