

Today we’d like to introduce you to François Duquette.
François – please share your story with us.
Born in Canada, worked as a chef in South Florida for many years. Decided to make Flatlands a Cajun style restaurant from his influence of traveling to New Orleans many times throughout his life.
We opened Flatlands in August of 2016, after having a few other restaurants in the Roswell area.
We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
For the most part, we have been lucky in the success of Flatlands Bourbon and Bayou. The biggest struggle we have had is our location. We are off main street- however, behind another building so most of our customers are hearing about us from word of mouth.
So, as you know, we’re impressed with Flatlands Bourbon and Bayou – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Really tried to bring the “Bayou” feel of Louisiana to Alpharetta with Cajun and southern style dishes, décor, music and atmosphere. We have an extensive bourbon list and hand-crafted drinks on our cocktail menu. Most popular dishes- gumbo, crawfish combo, fried chicken, trout Eugene and redfish.
So, what’s next? Any big plans?
We definitely plan on growing the restaurant, and opening up some more locations in the area with different concepts but the same roots.
