

Today we’d like to introduce you to Nilmar Atencio
Nilmar, we appreciate you taking the time to share your story with us today. Where does your story begin?
I am Nilmar Atencio, I was born in Venezuela, I graduated as a journalist, I studied cooking and then I studied nutrition coaching. I lived for 10 years in Miami where I worked as a Pastry chef. I worked in hotels and fine dining restaurants such as Bazaar by José Andrés.
I have always had a love for healthy pastries since I was little, my father is vegan and I always looked for healthy options for him, today I dedicate myself to this above all because I also went through delicate moments of health, and even though I have been living in Georgia for 1 year, I decided to create my business of healthy desserts sugar-free, gluten-free, some dairy-free and others keto friendly.
I want to offer healthy options for people who lead a healthy lifestyle, and those who cannot consume gluten or sugar.
We all face challenges, but looking back would you describe it as a relatively smooth road?
No, it has not been easy. Since I arrived in the United States, I have dedicated myself to working on my career as a Pastry chef and I have had to sacrifice many things and moments in my life for the love of baking, I am sure that many immigrants and non-immigrants have had to do so.
But nothing is impossible and it’s nice to be able to do what you like, so all the sacrifices are worth it and I love to continue working in this area to help others.
So, I continue to hope that many people will join a healthy lifestyle.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I work as a Pastry chef and I specialize in healthy baked goods. Many people know me because I dedicate myself to studying and making gluten-free and sugar-free desserts. Even though I worked with sugary desserts in the past, my specialization is now different.
I am proud of the fact that I keep trying, I keep trying to inform and explain to people what they are consuming, that I love to offer products that even if you think they are gluten-free or sugar-free, you don’t sacrifice their flavor, that I generate peace of mind for the client that what they will consume is something delicious but that they will not feel remorse and last but not least is to provide desserts to those people who do not have many options in the current market.
I feel that what defines me is my energy as a person, being able to use a gift to help others, above all, to understand them and to be able to serve as an example. We are all special and we have a characteristic that defines us. Mine is to help and provide delicious desserts without remorse.
What makes you happy?
I think what makes you happy is a personal decision.
I am happy to be able to do what I like, to enjoy my favorite food, or to go out with my friends for a coffee, everything in this life is a decision and you choose what makes you happy as a person.
