Hi Terry, so excited to have you with us today. What can you tell us about your story?
My name is Terry Jones and I’m the chef and owner of the popular food truck Its Go Thyme and I have become known for my inventive approach to sandwich-making, turning entire meals into unique handheld creations. My culinary journey includes competing on Food Network’s Fire Masters and The Great Food Truck Race, where I showcased my talent and creativity on a national stage. With crowd-pleasers like the Shrimp and Grits Sandwich — featuring grits as buns and a Cajun cream-sauced shrimp patty — I continue to surprise myself and delight food lovers, redefining comfort food in every bite.”
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The road definitely hasn’t been easy. After being laid off in 2020, I took a leap of faith and bet on myself by launching a food truck and creating a completely new niche in the world of sandwiches. Building the truck was just the beginning—once I opened, one of the biggest challenges was getting people to take a chance on something unfamiliar. Introducing a new food concept takes time, trust, and consistency, but I’ve stayed committed to the vision and continue pushing forward, one sandwich at a time.

I’m the chef and owner of It’s Go Thyme, a food truck business that transforms entire meals into unique, unforgettable sandwiches. My vision is to deliver bold, innovative flavors in a portable, accessible format while redefining what a sandwich can be. From shrimp and grits Samage (that was featured on the great food truck race season 17) turned into a handheld delight to vegan mushroom Philly sandwiches on homemade sesame seed hoagie rolls, I’ve built a concept that surprises and satisfies customers at every bite.
What We Offer
At It’s Go Thyme, I specialize in creating elevated sandwiches that are far more than typical street food. Each sandwich represents a complete meal, carefully deconstructed and reimagined between two slices of bread—or sometimes bread alternatives, like grits “buns.” What sets us apart is the attention to detail: homemade sauces, thoughtful combinations of textures and flavors, and a rotating seasonal menu that keeps customers excited. I believe food should be fun, bold, and delicious, and It’s Go Thyme delivers on all three.
My greatest achievement so far has been building It’s Go Thyme into a thriving, recognizable brand that showcases my creativity and passion for food. Competing on Food Network’s Fire Masters and The Great Food Truck Race was a pivotal moment in my career, proving that my skills and ideas could stand out on a national stage. But beyond the spotlight, my true achievement lies in connecting with my community through food—turning bold, unexpected concepts into sandwiches people love and remember. Seeing customers light up when they try one of my creations, or returning for their favorites, is a constant reminder of how far I’ve come and how much more I can achieve.
