Apparently it was National Banana Bread Day yesterday and I totally missed it 🤷🏻‍♀️. Better late than never though so here is my contribution: THE BEST BANANA MUFFINS ever 🙆🏻‍♀️😍. These are fluffy, light, naturally sweetened, and so very yummy 😋. Make them 👇🏻: ~ THE BEST BANANA BREAD MUFFINS (Vegan, Paleo, No Sugar Added) 1 1/2 cups all purpose flour 2 1/2 tbsp almond flour 1 tbsp psyllium husk 2 tsp baking soda 1/4 tsp salt 1/2 tsp baking powder 4 bananas, mashed 1/2 packet stevia 1 tsp vanilla extract 2 tbsp safflower oil Optional: crushed walnuts ~ Mix flours and psyllium husk together and add salt, baking soda, and baking powder. In another bowl, mix mashed bananas, vanilla extract, and safflower oil. Add wet ingredients into dry and mix well. Grease a muffin tin and fill 3/4 of the way up with batter. Bake at 350 F for 15-20 minutes or until toothpick comes out clean. . If you make these (which you totally should), I wanna see! Tag me please 🙏🏻😇.
