Hi Amber, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
In the heart of Norcross, Georgia, a mother-daughter duo embarked on a flavorful adventure with a humble coffee cart named “Chillybean Coffee Co.” Mattie, the daughter, began her journey as a college barista, honing her skills and passion for coffee. Her dedication led her to train in the coffee capitals of New York City and Italy, where she drew inspiration for a school project that would eventually become the business plan for Chillybean.

Amber, the mother, decided to close her thriving photography business to join Mattie in this new venture. Together, they brought Chillybean to life, serving their delightful brews at art festivals, weddings, music festivals, and movie sets across the Atlanta area since 2017.

In 2019, the duo took a significant step forward by opening Rushing Trading Co., Chillybean’s permanent location in Sugar Hill, Georgia. This charming spot quickly evolved, offering not only exceptional espresso but also craft cocktails, homemade buttermilk biscuits, and a gourmet brunch menu that captivated the community.

The journey didn’t stop there. In May 2024, Rushing Trading Co. 2.0 was unveiled, with Amber stepping into the role of executive chef. She masterfully executed beloved original recipes while introducing innovative new menus and flavors, solidifying their place as a culinary destination.

From a small coffee cart to a renowned culinary haven, Chillybean Coffee Co. and Rushing Trading Co. continue to delight and inspire with their dedication to quality and creativity.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
While the journey of Rushing Trading Co. (RTC) has been filled with successes, it hasn’t been without its challenges. One of the primary hurdles was assembling an exceptional restaurant team. Over the years, RTC has meticulously built a dream staff, including an outstanding operations manager, assistant managers, servers, baristas, bartenders, and kitchen staff, all dedicated to delivering top-notch service.

Another significant challenge has been navigating the complexities of inflation and rising prices of goods. This obstacle requires constant vigilance and strategic adjustments to maintain the quality and affordability that RTC is known for.

Lastly, carving out RTC’s unique niche in the competitive culinary landscape was a formidable task. From the outset, the goal was to create a space where both the restaurant and coffee shop could excel, offering an unparalleled experience to patrons. Through perseverance and innovation, RTC has successfully established itself as a beloved destination, known for its exceptional offerings and warm, inviting atmosphere.

Amber Rushing, the co-owner and chef of Rushing Trading Co. Inc., has redefined the brunch experience. In her kitchens, every dish is crafted in-house, from the southern buttermilk biscuits to the Caesar salad dressing. Amber seamlessly blends the European flavors she adores from her travels with her southern comfort roots, creating a unique and delightful culinary fusion.

Her commitment to locally sourced, globally inspired brunches has earned widespread acclaim. But Amber’s culinary journey doesn’t stop there. She continually pushes the boundaries by experimenting with new flavors and designing specialty menus for evening tastings and exclusive customer events.
