Today we’d like to introduce you to Nour Rabai.

Hi nour, please kick things off for us with an introduction to yourself and your story.
Pita Mediterranean Street Food was born from hard work, heart, and a passion for sharing bold Lebanese flavors with more people.

The journey began with The BeiRut in Peachtree City — a restaurant I proudly built with my family. The community embraced it, and we are grateful for its success. But I knew we could do more. While The BeiRut delivered an incredible dining experience, it wasn’t designed with busy families in mind. I wanted to create something faster, more accessible — without sacrificing the quality and authenticity that made us special.

So I reimagined the experience.

That vision became Pita by The BeiRut — a fast-casual concept built around fresh ingredients, vibrant Mediterranean flavors, and genuine hospitality. It was quick, approachable, and full of personality. The response was immediate. After opening four successful locations, the demand for more was undeniable.

In 2016, we officially began franchising and sold our first Pita Mediterranean Street Food franchise — marking the start of an exciting new chapter.

Since 2017, Pita Mediterranean Street Food has expanded into Alabama, South Carolina, Florida, and across Georgia — growing our footprint while staying deeply rooted in our Lebanese heritage.

Today, every plate we serve reflects our story — bold flavors, fresh ingredients, and a commitment to bringing people together around delicious Mediterranean food.

This isn’t just a restaurant.
It’s tradition reimagined.

Now, with over a decade of Pita Mediterranean Street Food – our team has shaped a vibrant culture of culinary excellence and customer-centric innovation.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Like any growing brand, we have faced our share of challenges — especially during the COVID-19 pandemic. Sourcing products became incredibly difficult, and securing fair pricing on paper goods, food, and equipment was a constant battle.

As a franchisor, my priority has always been supporting our franchisees. I am continually negotiating better pricing and stronger vendor relationships to protect their margins and set them up for success. During the pandemic, that work became even more complex — at times nearly impossible — but it pushed us to become more strategic, more resilient, and more unified as a system.

We didn’t just survive that period — we grew through it.
We learned more about our operations, strengthened our partnerships, and used the time to clearly define our long-term goals and vision for the future.

One lesson stands above the rest: the right team makes all the difference.

Strategic leadership is the cornerstone of our operations. From our corporate team to our store-level managers, success starts with people who are aligned, disciplined, and committed to excellence.

And just as important is finding the right franchise partners — professionals who are excited about the brand and passionate about growing with us. We are always looking for driven individuals who want to be part of something bigger than themselves and who are ready to build lasting success together.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
My day-to-day focus is simple: support our franchisees and position them for success.

That means negotiating strong contracts and securing competitive pricing on food, paper goods, and chemicals to protect margins and drive profitability. It also means leading and developing our team — ensuring we properly train, support, and grow each new location with consistency and excellence.

Beyond operations, I spend a great deal of time identifying new opportunities for expansion. I visit prospective sites, analyze markets, and meet with potential franchise partners who are ready to grow with us and strengthen the brand.

But the most rewarding moments are the grand openings.

There is nothing more fulfilling than stepping back and watching a line form outside one of our new locations. Seeing guests experience our concept for the first time — tasting our fresh ingredients and bold Mediterranean flavors — reminds me why we started this journey.

When I’m able to personally interact with guests and introduce them to the flavors I grew up with, it brings everything full circle. What began as childhood memories around the table has grown into a thriving brand — and sharing that with communities is what makes the work truly meaningful.

If you had to, what characteristic of yours would you give the most credit to?
One of our greatest strengths is adaptability — specifically, our ability to pivot.

The food industry is exceptionally fast-paced and constantly evolving. Consumer preferences shift, supply chains fluctuate, and market conditions can change overnight. Our success depends on our ability to stay flexible, make smart adjustments, and respond quickly without losing focus.

We’ve built a culture that embraces change rather than resists it. When challenges arise, we assess, adapt, and move forward — stronger and more strategic than before.

At the same time, adaptability never means compromising who we are. We remain grounded in our Mediterranean roots, committed to bold flavors, fresh ingredients, and the authenticity that defines our brand.
