Hi Saphir, thank you so much for sitting down with us again. For folks who might have missed our initial interview, can you start by briefly introducing yourself?
I am French, was living in Paris when an opportunity to move to Georgia came. I was a financial advisor then (before that, I was a art restorator and an archeologist) and went to the best crepe school in France to learn the authentic art of crepes and bring it to America.
How did you get to become so popular in the movie industry in Georgia?
It was two magical steps: 1) One crew member came to a wedding we were catering in Athens GA. This crew member called me one day and let a voice mail ” Hey I am B…, I came to a wedding a couple of weeks ago in Athens and your crepes were out of this world. I work for the Walking dead and would love to bring you on set” I had to hear the message 5 times to make sure I was hearing right ”The Walking dead” I couldn’t believe it.
We went on set and it was extraordinary.
2) Just a few days after that, a Craft Service person of a tv show (Valor) called me and told me ”I am going to ask you to do something impossible. We need a crepe food truck in 5 hours in Atlanta for 150 crew members for an anniversary” I said yes without even thinking how am is going to make that happen, being in Athens, not ready at all, no team confirmed, and 2 hours away from Atlanta just the drive. We did it anyway and I realized that something incredible just happened.
These made our reputation and we started to get calls regularly sometimes 7 or 8 times from the same tv show. In 2 years we served more than 40 movie sets and as a huge lover of the film industry, it is the biggest pride of my life.
What makes Holy Crepe so unique in the catering and food truck world?
Holy Crepe was conceived in France, born in America. We took a crossroad between authenticity and audacity and just that makes us different. But there’s so much more. We are capable to serve 140 crepes per hour without losing an ounce of our high quality of food and service. We have a very strong philosophy of life and work, business is not business it is human beings first. Holy Crepe is an expression of our deepest mission: to convince people that our differences are our strength, not our weakness. We should embrace our difference not fear them. I believe our customers and partners can feel it and feel that we want to make this world just a little bit better, one crepe and smile at a time.
What are the biggest problems you can solve for your customers?
They don’t need to choose between time, quality, service, savory, dessert. We harmonized everything in such a way that our clients feel they have nothing else to do than to tell us where to park, we take out of their shoulders all the rest of the pressure.
If you had to explain what Holy Crepe is all about in one word, what would it be?
Feel
What do you mean by business is not business, it is human beings first?
We need to put people in the center of our decisions because everything else is abstract. Keeping in mind that no matter what we do, it is going to have consequences on other human beings, help us to make decisions that we will not regret in one week, one year, ten years. A business is at the service of humankind, not the opposite or it could become just a gigantic abstract thing feeding itself for no other reasons than feeding itself….we chose instead, to feed people.
How did you survive and how do you continue to thrive in the COVID era?
We survived by reminding ourselves of something that Winston Churchill said: A pessimist sees difficulties in every opportunity. An optimist sees opportunities in every difficulty. We ask ourselves the question ”What can we do, such by doing it, we get out of this challenging event better than if it didn’t happen”
These mantras made all the difference.
